Coconut, Chocolate and Rum Soaked Raisins Cookies


That’s what I did…all day yesterdayThe house was in a bad state. Had to be done.

Such a boring way to spend what was probably the hottest day of summer yet. And maybe it was the heat that gave me the idea of the flavour of these cookies…Coconut and Rum anyone?

I always have a jar of raisins that have been soaking in alcohol and that I can use whenever. It’s great for baking but also for various savoury dishes like couscous or chicken.

But for now COOKIES!


200g unsalted butter, at room temperature
85g light brown sugar
85g golden caster sugar
1 egg
225g self-raising flour
50g plain chocolate, roughly chopped ( I used 70% cocoa)
40g desiccated coconut
70g rum (or other alcohol) soaked raisins

Heat oven to 190C/fan 170C

Beat the butter, sugars and egg until smooth and creamy.

Mix in the flour, chocolate, coconut and raisins. Spoon onto non-stick baking sheets in large rough blobs making sure they are well spaced. This quantity should give you about 20 cookies…as long as you don’t drop the first batch on the floor like I did!

Is it bad that we still ate them…? I cleaned the house! They were fine!

Bake for 12 mins until just golden and soft in the middle. Leave it to cool on a wire rack.


These are truly delicious and the combination is fab!
