It’s pancake day! Who doesn’t get excited about pancake day eh? I don’t care how old you are, it’s one of those things that brings a smile to everyone’s faces.
In our household we have had however to make a little change. As Christoph is not at home on Tuesdays we would not be able to celebrate pancake day. So what did we do? We had a pancake day on Sunday! We had pancakes for breakfast, for lunch and for dinner!
It was amazing.
So seeing as you will be celebrating today I tought I’d share the flavours we had for breakfast (and dessert…) so that it might inspire you for your pancake day!
Coconut, Pistachio and Blueberry Pancake:
150g self-raising flour
50g dessicated coconut
150g pack blueberries (+ extra to scatter on top)
30g crushed pistachios
1 tsp baking powder
knob of butter
1 egg
300ml milk
Maple Syrup
Mix all the dry ingredients in a bowl first along with all of the nuts so they are evenly distributed. Whisk the eggs and the milk together and mix with the dry ingredients. Melt the knob of butter and fold into the mixture. Once done add the blueberries and give a final mix.
To cook melt a knob of butter in a frying pan. Once melted place 3 tablespoons of the mixture for each pancake in the pan. Allow the pancake to cook until there are bubles coming through to the top of the mixture. When this happens you can turn over to cook the other side for a further 1.5 to 2 minutes.
To keep the pancakes warm when cooking for a few people you can keep them on a plate under foil.
To serve stack nice and high with some fresh blueberries, drenched in mapple syrup!!
And there you have it! They were absolutely delicious, I couldn’t get enough!
