Spicy Cauliflower ‘Hummus’ Dip

20131106-093539.jpgI’ve had this delicious post written up for such a long time now but then I decided to change this blog’s appearance – what do you think? – which took a while to decide.

After that, my genius self decided to expand Littlebitsofnice presence over the internet….and now I am bordering on complete and utter despair!

I thought the basics would a piece of cake and that then I would slowly build up on it and it would grow nicely…

How wrong was I! Two words: Facebook Pages. I die a little inside whenever I hear those two words.

Seriously, is Facebook Pages the least user-friendly place ever or what? I admit it, some of it probably has to do with my inexperience with Facebook as I do not have a personal Facebook account. Nor do I ever want to have one. Facebook is not my thing but that is not to say that I cannot see how it can be useful in other ways. Which is why I created a Littlebitsofnice Facebook Page. Well, it’s there…that’s as much as I can say about it. I am having a hard time turning it into an interactive space. The more I search online the more confused I get as it seems so much has been changed about them that the help offered is outdated and makes no sense anymore. It also seems that if I had a personal account everything would be a lot easier. Not. Going. To. Happen.

How the hell do you find other pages without a search bar? *Pulls hair out*

I am usually good with this kind of stuff, quick at working things out, but this has me feeling rather stupid! Enough with the rant, I could go on forever. But it’s early in the morning so I would rather talk about something that makes me happy . Food!

Now, find me someone who doesn’t like hummus? I can honestly say that I haven’t yet met anyone who doesn’t like it. Not that I can be 100% confident of this as I don’t go around randomly asking people if they like hummus…that would be weird…maybe…

It’s such a moorish snack. I love it with fresh thinly slices vegetables and/or some pitta bread to dip in, but I think it’s also delicious used inside of pitta breads with either falafels or halloumi…droooooool. Writing this post before lunch is turning out not to be a good idea!

Hummus, as we all know, is made with chickpeas (isn’t chickpea such a cute name?) but I wanted to make something a little different. And I think cauliflowers are so versatile. It’s so easy to get stuck into making the same thing over and and over with a vegetable, I am very guilty of that, and so it is so lovely when you find something different.

I’ve made cauliflower mash before ( I’m saying I, but actually it was my husband) and I absolutely love it, the consistency is great and it’s super tasty. We’ve all had all matters of roasted cauliflowers and cauliflower soups. Cauliflower is always a great replacement for potatoes in recipes I find. But I can honestly say that until recently, I had never had a cauliflower ‘hummus’ dip. So yes, technically not hummus. But equally delicious! Also if you happen to be on a Paleo diet this would be good too!

Recipe:

– 1 head of cauliflower (ours was a medium size)
– olive oil
– 3 generous bulbs of garlic
– salt and pepper to taste
– zest and juice of 1 lemon
– 1 1/2 tbsp of harissa paste (we didn’t think this was spicy and we think we could have gotten away with more, but we like spicy so think about what you like)
– 1/4 tsp smoked paprika (as smoked paprika can overpower flavours very quickly I would advise to start with an even smaller amount and add more according to taste, or use normal paprika)
– 4 tbsp Tahini

Pre-heat the oven to gas 6/200C non fan

Cut your cauliflower into slices and pop them on an oven tray. Coat with a little olive oil and season with salt and pepper to taste. Bake for about 20 or until they are soft and have a bit of colour. When there’s about 10 min left add the garlic, skins still on.

In a food processor, add your cauliflower, garlic (skins removed), zest and lemon juice, harissa, paprika and tahini. Start whizzing and slowly drizzle some olive oil into the mixture while it’s whizzes away until you get the right consistency. Stop, taste and adjust any ingredient according to your taste buds.

Et voilĂ ! You are ready to dip the evening away or even eat it as part of your meal! I made this yesterday evening and we are having some with friends today and it’s still perfect, if not even better. This would be great to prepare in advance for a gathering or to have it in the fridge for a healthy mid afternoon snack!
