Cheese and Rosemary Scones

Scones. I love scones. I’ve had the original sweet type with plenty of strawberry jam and huge amounts of cream…Totally delicious.

However being a savoury person I was really keen to try something a little different. I had also never made scones before. I always thought they would be very hard to bake and get right.

I was wrong! – and my husband can confirm that it does not happen very often…

Flavour. What shall I do. Hmmm.

I had cheese in the fridge (who doesn’t!)…

And we have rosemary growing in the garden…

Sorted!

Recipe (makes 8): slightly adapted from bbcgoodfood

140g self-raising flour
140g wholemeal flour
1 tsp baking powder
50g butter cut int cubes
100g mature cheddar, grated (if you don’t have cheddar but have another cheese in your fridge try it!)
1 egg
A handful of Rosemary sprigs (how much depends on how strong you like it. We like it medium) + extra for sprinkling – chop them up a little
2 tbsp Greek or natural yogurt
3 tbsp milk, plus extra to glaze
Sea salt for sprinkling

Heat oven to 190C/fan 170C.

Mix flours and baking powder in a food processor. Add butter and whizz until you get a crumbly texture (you can also do this by hand by rubbing the butter into your dry mix).

Mix the cheese and rosemary in.

In a separate bowl, whisk the wet ingredients, egg, yogurt and milk. Add this to your dry mix, bringing it all together slowly and so that it is soft but not sticky.

Prepare your work surface with some flour and roll it out so that is it about 2cm thick. Using cutters – or a glass if you don’t have any – cut out the scones, making sure you use all of the dough by gathering any remaining bits from your first ones and repeat the rolling process.

Brush some milk and Sprinkle extra rosemary and some sea salt on top of each scone.

Bake for 10-12 min unil golden. Leave it cool slightly on a wire rack.

Delicious with just a knob of butter or why not go crazy and add some nice ham!

These scones are easy to make, they don’t take long and are utterly satisfying with a nice cup of coffee at breakfast time or for an afternoon treat. They don’t last long and are better eaten the same day (we did have some the next day and they were still good, just not super fresh).
